I feed up my sourdough starter nice and fat starting on Tuesday and make about 6 1 5# loaves of sandwich bread, then all the side sourdoughs like tortillas, naan, prepare for making English muffins, etc

Of course you need to try some of the naan breads---they are to die for and resemble pita bread only so much better---ask for the cucumber yougurt sauce on the side (raita) with your main meal to help cool down your tastebuds in case they do get "fired-up" a bit Bon apetit!

Is it called something different if it's filled with pastry cream vs Chantilly cream? Also on Profiteroles: Am I correct in assuming these are only ever filled with ice cream? My freezing cream puffs I had to remake the choux dough as it didn't puff properly the first time, and I'm assuming it's because I wasn't measuring my flour correctly
