The best advice is to check your flight status as it gets closer to departure That 5-day timeframe may change if Southwest is able to be more proactive with cancellations, and or are able to bring in additional aircraft to help fill the gap (although I've not heard anything officially)

I have a suggestion for an improvement to flight status messaging - have a way for RR members to automatically have it set up (to their preferences of course) for any flights booked For example, I love the notification (especially when I'm on the run and forget to double check my flight status), but I don't always remember to set it up

The lesson here if your flight is originally at 7:50 but delayed still show up at say 7pm in case such change happens but check the status throughout the day as not all updates come by text or can be delayed (technology isn’t perfect) now with the hotel did you try contacting Disney and seeing if they can work any magic?
