For baking purposes, they're interchangeable I've used corn, vegetable, and canola oil in cake recipes with no noticeable difference If you were frying food, corn oil would be better because of its higher smoke point

If a cake recipe calls for vegetable oil, do any of you replace it with canola oil? I seem to remember my mother doing this and her cakes were always moist and delicious I know that canola oil is healthier than veggie and I would like to start using it Could you replace the veggie oil with 1 2 canola and 1 2 butter for even more flavor? Vegetable oil comes from a combination of sources, sometimes including peanuts, soy, sunflower and canola (rap seed, I think) Becuase of peanut and soy allergies, I ONLY use canola, which isn't a combination of oils Granted it's not as bad as pure peanut oil or pure soy oil for those who are allergic, but I don't want to take any chances!

I do know that butter has water in it--hence 100 calories per T of butter vs 120 calories per T of vegetable oil Here is a link that explains it better than I can I personally don't believe you get the same results and can just sub in oil for butter or vice versa without a change in texture
