You don't actually produce blue cheese in a "cellar" The blue cheese must be open to the air (so it can't qualify as a room), must also have shelf stability of 50% or better (since it's not a room, this means it has to be cold), and must receive little sunlight (solid blocks all around it including the entrance tunnel, for a distance that ensures sunlight doesn't reach it even around corners
