Ganyu's Melt teams are just a mix and match of a strong Pyro application + Anemo other buffs + Shield • Double Pyro With Zhongli and the strong duo of Xiangling Bennett you will have no problem performing high Melt blooms while not having to worry too much about the enemy's damage

My Ganyu is Wandered Troupe for both melt and freeze but optimally i think Marechausse Hunter is the best set for this team Furina is Golden Troupe, Kazuha is VV and Charlotte ideaaly would be Song of days Past or Noblesse for max buffing potential but i just 2 piece Ocean Clam and 2 piece atk%

Freeze Ganyu gets outdamaged by Melt Ganyu, but has the advantage of being much smoother to play Both of your really good options for Hydro application, Xingqiu and Mona, are more fire and forget, though they are still imperfect (the former requires weaving in a normal auto, while the latter doesn't have 100% Frozen uptime)
