Most of my hardwood bench top is under 2" thick It has skirts so it's about 4" in the front I don't see a need to go thicker with the maple and cherry I used I don't know what the benefit of a 3" MDF bench top would be If you're concerned about sagging you could use a thinner top and support it with the frame so it doesn't sag
