I finally had some time to install and make some test scans with NAPS2 I'm stunned, such a clear and logical UI, OCR kinda works (need to check out the multi language OCR option available via command line), and it does generate a fairly good sized PDF out of a 300 DPI scan

NAPS2 can do OCR, but I think it uses but Tesseract which sucks on low resolution or noisy images Give it very high resolution and it can do an alright job You're very unlikely to find a free tool to parse the data unless that book is a very common format Somebody will have to write something
