Have you tried manually changing the language back to Spanish in the settings and make sure the "Use my Microsoft 365 settings" is not enabled? If so, does it revert back to English again? Refer to Manage language settings in Outlook - Microsoft Support Are your browser's language settings are set to Spanish?
