As far as racks I don't use one cause I only cook a couple racks at a time When I do baby back ribs I shoot for 225-250* and I do a 2-1- 5 for baby backs 2 hrs on the smoker, 1 hr wrapped in foil and finish it back on grate for 30 minutes with sauce This is taken from the 3-2-1 technique but I always felt personally that this was to long for baby backs

I used my UDS this past weekend for the first time to smoke some ribs and the bottom of the 2 racks that were on the lower grate got burnt The temp in the drum never got over 230 and there is plenty of space between the charcoal basket and the lower grate I think I need to add a diffuser below
