Sukuna's character revolves around the fact that he only cares about himself and what suits his own interests and his complete disregard for the value of love He clearly does enjoy Uraume's company, though From what I can guess, they have something akin to a Dio and Puuci relationship

I've seen people use both "he" and "she" for uraume equally, so I guess since people probably forgot their introduction, plus the fact that they aren't often referred to with pronouns, people just use whatever they think they remember being accurate
