The only names I've heard them called is the less-than sign and the greater-than sign, but those names seem rather informal and apply only to their use in math The symbols are used in other contexts as well, so it seems they would have less specific names Does anyone know the technical term for these symbols?

Another option to try: to type the greater than (>) sign using an Alt code, you'll need to press and hold the Alt key, type 0155 on the numeric keypad (with Num Lock on), and then release the Alt key
